
If you are time poor and have a busy lifestyle this one is for you. When I became a mum time became limited, however I still wanted to ensure my body was getting enough of the good stuff. So, I created this simple and easy to make slice to support me in getting some additional nutrients. on the go. Best thing is it takes 5 to 10 minutes to make!
Ingredients:
1 cup coconut oil
1/3 to 1/2 cup honey or monk fruit (depends how sweet you like it!)
3 cups rolled oats (quick oats will go gluggy so make sure you use rolled)
1/2 tsp ground cinnamon
1/4 tsp kosher salt
1/2 cup dried goji berries
1/2 cup sultanas
1/3 cup pepitas
1/4 cup hemp seeds
1/4 cup chia seeds
**always use organic ingredients where possible
Directions:
line a medium square or rectangle pan with grease roof paper.
in a medium saucepan, combine the oil, and honey.
heat over low-heat, until the oil has melted, and honey has diss olved.
add the oats, and all of the other ingredients.
cook, stirring constantly for 4-5 minutes until oats start to soften.
pour the oat mixture into prepared baking dish. spread and press down.
refrigerate for 4 hrs, or until set then slice with a sharp knife.
